Pea Pesto

When I hear a word pesto it is usually Italian pesto Genovese that comes to my mind. Or even red pesto made of sun-dried tomatoes. But I am pretty sure that this little twist with  peas is something you will like.

I love to serve this pesto with grilled chicken breasts or turkey but it is great with pasta as well. It has very light and creamy taste and it takes just 5 minutes to prepare. You can store it in your fridge up to one week and it will still taste amazing. I recommend you to use fresh peas and not the frozen ones as it makes a huge difference. For this recipe I used basil but you can add a little bit or arugula for a slightly stronger and spicier taste. If you cannot find pine nuts, the almonds work very well too.

Ingredients:

  • I cup of peas
  • 2 cups of basil
  • 1/2 cup of olive oil
  • 1/3 cup of grated parmesan
  • 1/3 cup of pine nuts
  • 1/2 lemon (juice)
  • 1 clove of garlic (minced)
  • salt and pepper

Instructions:

  • Place all the ingredients into food processor and blend very well.
  • Serve with your favourite pasta, meat or fish
